Dahi vada recipe | dahi bhalla recipe | dahi balle | dahi bade with detailed photo recipe. an extremely popular and tasty street food snack recipe made with urad dal fritters and dipped soaked in spiced creamy yoghurt sauce. it is one of the popular street food of north india, if not of whole india and is often served as dessert snack. there are myriad ways to make this yoghurt dipped snack, but this recipe dedicates to the north indian street style variation.
street food or chaat recipes have become an integral part of india food or indian cuisine. each region, state and even a city has its own contribution to this popular and demanding street food category. one such ultra-popular street food meal from delhi street is the dahi vada recipe or natively known as dahi bhalla recipe known for its sweet, spicy and savoury taste combination.

yoghurt or curd based snacks or recipes is always my favourite recipes. perhaps it has a soothing and satisfying feeling when served with a combination of spicy and savoury snack. urad dal vada is one such savoury and spicy snack, which gets smooth and soft when dipped in creamy and sweetened yoghurt. having said that, even before it is dipped in curd, i have dipped in hot water so that it gets soft immediately and also the excess oil is removed. this is the technique it is followed in street vendors or hotels which helps to make it even softer. in addition, the other advantage of soaking in hot water is to hasten the softening process of vada. for instance, it takes double the time vada’s to get soaked and soft in creamy curd as it is thicker compared to water. so dipping in hot water and then eventually soaking or serving it with creamy yoghurt would be an ideal trick for dahi bhalla recipe.

furthermore, i would also like to add some more additional tips, suggestions and variations to the dahi vada recipe. firstly, for the street style variant i would heavily recommend to prepare round or ball-shaped vada’s. do not bother with the doughnut-shaped vada as it does not really help with the taste, and soaking. secondly, if you feel dropping the vada’s with your fingers is not yielding a ball-shaped vada, you may use round tablespoon. you may have to occasionally dip it in water and clean it before further use so that the batter can easily slip to hot oil. lastly, i have served directly with creamy, spicy and sweetened yoghurt after it is dipped in hot water. i have not specifically soaked in curd but there is no harm in doing so. but there is no actual requirement as it is super soft after it is soaked in hot water.

Ingredients:-
for vada:
• 1 cup urad dal
• ¼ cup moong dal
• 1 chilli
• 1 inch ginger
• 1 tsp salt
• oil for frying

for soaking:
• 5 cup hot water
• ½ tsp salt
• ¼ tsp hing / asafoetida

for sweetened curd:
• 2 cup curd fresh & thick
• 2 tbsp sugar
• ½ tsp salt
• for serving:
• green chutney
• tamarind chutney
• chilli powder
• cumin powder
• chaat masala
• boondi
• coriander finely chopped

Instructions

how to make vada for dahi bhalla:
1.firstly, soak 1 cup urad dal for 5 hours.
2.drain off the water and transfer to the mixi or grinder. also, add 1 chilli and 1 inch ginger.
3.blend to smooth paste adding water as required. try to add a minimal amount of water to prevent the batter from turning watery.
4.transfer the urad dal batter to a large bowl.
5.take ¼ cup soaked moong dal into the blender.
6. to smooth paste and transfer to the same bowl of urad dal batter.
7.now add 1 tsp salt and mix well using the whisk.
8.prepare a thick batter. if the batter is runny then add a tbsp of rice flour.
9.now wit wet spoon or using hand, drop a spoonful of batter into the hot oil.
10.keeping the flame on medium, stir occasionally.
11.fry until the vada turns golden brown and crisp.
12.drain off the vada over kitchen paper to remove excess oil.
13.now in a large bowl take 5 cup hot water.
14.add ½ tsp salt and ¼ tsp hing. mix well making sure it is well combined.
15.now drop the hot fried vada into the water and dip completely.
16.soak for 30 minutes, or until the vada absorbs water.
after 30 minutes, squeeze off the water and transfer to plate.

how to prepare sweetened curd for dahi vada recipe:


1.firstly, take 2 cup curd, 2 tbsp sugar and ½ tsp salt.
2.whisk and mix well making sure everything is well combined.

how to assemble dahi bhalla for serving:

1.firstly, pour the sweetened curd over the vada.
2.also pour a generous amount of green chutney and tamarind chutney.
3.sprinkle chilli powder, cumin powder, chaat masala.
4.top with boondi and coriander.
5.finally, enjoy dahi vada or dahi bhalla chilled.
